From 2003 to 2007, Fausto Borella was at the head of a course for Olive Oil Sommeliers organized by the AIS (Rome).
Maestrod’olio® Academy was founded in 2008 with the aim of popularizing, through classes, courses and seminars, the knowledge of the best Italian extra-virgin olive oils and their pairings with food. Maestrod’olio Academy is a space dedicated to those who want to know the secrets of extra-virgin olive oil and would like to enter into its particular world and become olive oil tasters by attending our special courses.
The Academy also offers consultancy services to Italian and foreign businesses.
Since 2013, the Academy is involved in the publishing of a guidebook called Terred’Olio that includes a list of the best Italian olive oil producers with useful information about the history of their lands and business, about their products and craftsmanship, and also some tourist tips. Every year this guide is updated and published anew, and presented in February, during extraLucca, the annual forum on extra-virgin olive oil organized by Maestrod’olio.
